Here, focaccia cubes are toasted to create fresh croutons.

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 1½ tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • Pinch of freshly ground black pepper
  • 7 ounces (about 9 cups) mesclun
  • 2 large eggs, hard boiled, peeled and cut into quarters
  • ¾ pound good quality salami, sliced thick and cut into cubes
  • 1 (3-x-3-inch) slice focaccia,cut into cubes and toasted

Instructions

In a large salad bowl, whisk together the oil, lemon juice, mustard, salt and pepper. Add the mesclun, eggs, salami and toasted focaccia. Toss gently and serve.
