mint gelatin with fresh berries

Ingredients

  • 6 tablespoons sugar
  • 1 cup water
  • 1/2  bunch fresh mint leaves (about 3/4 ounce)
  • 1 (1/4 ounce) envelope gelatin
  • 1/2 cup mixed berries (raspberries, blueberries, blackberries)
     
 

Instructions

Boil sugar and 3/4 cup water in a heavy saucepan; stir in mint, reduce heat to very low and gently simmer for 10 minutes. Remove from heat and strain into a large bowl, pressing mint to extract all of the liquid.

Sprinkle gelatin over remaining 1/4 cup water in a small bowl and let stand 2 minutes to soften.

Whisk gelatin mixture into mint mixture and let cool just to room temperature. Chill until set, about 1 hour. Cut gelatin into pieces and serve with berries.
