Here, focaccia cubes are toasted to create fresh croutons.
Ingredients
- 3 tablespoons extra-virgin olive oil
- 1½ tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- Pinch of salt
- Pinch of freshly ground black pepper
- 7 ounces (about 9 cups) mesclun
- 2 large eggs, hard boiled, peeled and cut into quarters
- ¾ pound good quality salami, sliced thick and cut into cubes
- 1 (3-x-3-inch) slice focaccia,cut into cubes and toasted
Instructions
In a large salad bowl, whisk together the oil, lemon juice, mustard, salt and pepper. Add the mesclun, eggs, salami and toasted focaccia. Toss gently and serve.
