honey-glazed pork with scallions and carrots

Ingredients

  • ¾ pound pork tips
  • Salt and freshly ground pepper
  • 2 cloves garlic, sliced
  • Extra-virgin olive oil
  • ½ cup honey
  • Juice of 1 lemon
  • 2 tablespoons unsalted butter
  • ½ pound scallions, thickly sliced
  • ¾ pound carrots, thickly sliced
  • 1 tablespoon sugar
  • 1 small bunch parsley, chopped
 

Instructions

Preheat oven to 325°.

Place the pork in an ovenproof baking dish, season with salt, pepper, garlic and a drizzle of olive oil. Bake for about 40 minutes.

In the meantime, place the honey in a small bowl and dilute it by whisking in the lemon juice. When pork has cooked, spoon off the fat, brush the pork generously with the honey mixture and put back in the oven for 30 more minutes, raising the heat to 400°.

In a large skillet, melt butter over medium heat and add the scallions, carrots, 1 cup water, sugar, a pinch of salt and pepper. Cover and cook for approximately 30 minutes until dry and glossy; sprinkle with chopped parsley.

Serve the pork surrounded by the glazed vegetables.
