fried fruit skewers

Ingredients

  •  3/4 cup unbleached all-purpose flour plus more for skewers
  • 2 large egg whites
  • 1 large egg
  • 1/3 cup plus 1 tablespoon granulated sugar
  • 1 1/2 teaspoons heavy cream
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon cinnamon 
  • 1/8 teaspoon salt
  • 3 medium bananas, peeled
  • 1 Honeycrisp or Jonagold apple
  • 24 3/4-inch cubes pineapple
  • About 3 quarts vegetable oil
  • 1/4 cup confectioners sugar
  • 1/2 cup apricot jam
  • 1/2 cup cherry jam

 

SPECIAL EQUIPMENT: a candy/deep-fry thermometer, 12 (8-inch) bamboo skewers

 

 

Instructions

 In a large bowl, whisk together flour, egg whites, whole egg, granulated sugar, cream, baking powder, cinnamon and salt until smooth. Transfer batter to a liquid 1-cup measure or wide coffee mug.


Peel bananas; cut each into 8 3/4-inch pieces. Peel and core apple; cut into 12 3⁄4-inch cubes (you may have some apple left over). Alternately thread 2 banana pieces, 1 apple cube and 2 pineapple cubes onto each skewer. 
 
Heat about 3 inches oil to 375° in a 4- to 5-quart heavy pot over medium-high heat.
Dip 1 skewer into batter and, using a spoon, spoon batter over any exposed fruit to coat all sides; let excess drip off. Fry skewer, turning once, until golden, about 1 1/2 minutes. Transfer to paper towels to drain. Repeat with remaining skewers.
 
Transfer fried skewers to a serving plate and dust with confectioners sugar. Serve warm with jams.
