MAKES: 1 drink

Because she was tricked into eating pomegranate seeds, the goddess Proserpina (Persephone in Greek) had to dwell in the underworld. But enjoying them in this refreshing drink is no punishment. The jewel-like seeds add gorgeous, festive color to this lemony gin drink plus a burst of sweet-tart flavor when bitten.

Ingredients

  • 4 paper thin slices fresh ginger
  • 1 ounce Plymouth gin
  • 1  ounce Stock limoncello
  • Club soda
  • 1 heaping teaspoon pomegranate seeds for garnish
 

Instructions

Add ginger to a cocktail shaker and muddle. Fill shaker with ice, add gin and limoncello. Shake for 10 seconds and strain over ice in rocks glass. Top with club soda and garnish with pomegranate seeds.
