Though less popular in the United States, rabbit is prized in many countries, including Italy. Abundant, quick cooking, tender, and delicious it's often used in recipes that in the states would feature chicken: cacciatore, main course salads, burgers, and pasta. You can find whole rabbits in most supermarkets.
