Weinsuppe

(Zuppa di vino in Italian) A delicate, velvety soup made with white wine, reduced beef broth, egg yolks, and cream, flavored with a pinch of cinnamon, weinsuppe is a signature dish in Trentino-Alto Adige. It is imperative that the soup never come to a boil or the yolks might curdle. When it is ready, it is ladled over bread cubes that have been lightly fried in butter until golden. The Terlanerweinsuppe is the most famous version of all, made in the town of Terlano with the prized local wine.
