If ever there were a symbol of springtime, it's the egg. In Pagan times, the egg represented the birth of the earth. It was then adopted by early Christians as a symbol of the rebirth of Jesus.
In Italian cooking, eggs are held in very high regard. Often taking the place of meat in main courses, they're also featured in desserts. In this collection of recipes, the egg is the star of the dish, and it's egg-ness is kept intact in dishes that feature both yolk and white. However, don't forget that eggs are also incorporated into many classic Italian dishes including frittatas and custard dishes like sweet zabione and savory sformato.
