If ever there were a symbol of springtime, it's the egg. In Pagan times, the egg represented the birth of the earth. It was then adopted by early Christians as a symbol of the rebirth of Jesus. 

In Italian cooking, eggs are held in very high regard. Often taking the place of meat in main courses, they're also featured in desserts.
